Back to school season is finally here! I can hardly believe I will have a daughter in Kindergarten on Monday. Since she has been in daycare and summer camp these past few years, I have not had to pack a lunch for her. It has been convenient not to have to pack a lunch, but I admit I am excited to take the lunch meal into my own hands. This week I enlisted my daughter’s help to come up with some fun lunch ideas that are healthy and delicious. I want to pack a lunch she will enjoy, so we sat together to make a list. My little foodie’s first suggestion was “how about some homemade dressing and veggies to dip in it?” Smart girl!

I set off with the list of requests to the Kroger store near me for some shopping.
My 5 year old eat more fresh vegetables than most grown adults, and would probably fill her lunch with only vegetables, so I tried to make the protein options appealing to her. We have some great lunch bins with various compartments to allow for some variety in her meal and keep things separate. One of the things I’m struggling with as I work to put together lunches is how to keep things hot or cold. The three-compartment bins below come with an option to add a frozen cylinder in the middle to keep things cool. The containers are from Goodbyn and a recent favorite of mine!

Turkey, Cheese and Lettuce Roll-up
Cherry tomatoes with dressing
Lunch Option #2
Italian Salad – romaine lettuce, tomatoes, cheese and Genoa salami
Crunch carrots and pretzels with a side of dressing

Ham and cheese sandwish
Cucumber slices with hummus or dressing
Half a banana
