I have to say, I was so pleased with the way this turned out! I was half tempted to make another batch but I will save that for another weekend. Most ceviche I have had in restaurants did not have the crunchy cucumber chunks, but I really enjoyed these in this recipe.
1 pound tilapia fillets, finely diced
1/2 cup lime juice (about 4 large limes)
1/3 cup finely chopped purple onion
10 sprigs fresh cilantro leaves, chopped
Put the tilapia in a shallow square glass baking pan (something that won’t be corroded by lime juice). Pour the lime juice over the fish and mix gently to combine. Add all other ingredients and stir well.
