Do you have a hard time keeping mealtime simple and easy? With two working parents and a young child, I have to do a lot of planning to make sure we are eating healthy, homemade meals as much as possible. While I usually resort to batch cooking or weekend cooking, there are only so many leftovers you can eat during the week. I like to make sure my fridge is stocked with quick, healthy things my husband and I can throw together for a snack or a quick meal when we get home.
The National Frozen & Refrigerated Foods Association (NFRA) is campaigning to spread the news about quality refrigerated dairy products you can use in your meal planning. Some of my favorite quick recipes are filled with delicious foods from the refridgerated dairy aisle and I wanted to share some of those recipe ideas here!
You can find a variety of quality foods in the refrigerated dairy aisle to create many meals, from breakfast or dinner to quick snacks. We always keep a bag of shredded mozarella cheese on hand. I like to use it in quesadillas, tostadas, pizza bagels and tacos.
You can check out my breakfast quesadilla recipe below. Doesn’t it looks yummy? We like to saute some bell peppers and onions, mix with scrambled eggs and cheese and serve. It is great plain or with some salsa.
Prepare mini egg cups the night before for a quick breakfast! I like to mix in cheese, tomatoes, spinach and onions with mine.
