Easy Fish Stew #Recipe

I love a tasty dish that is also easy to make.  This fish stew was almost...boring on paper.  Once I made it and spiced it up a bit, it was delicious!  If you haven't tried fish stew before (Lisa - I'm talking to you!), you should.  It is flavorful and healthy!

1 can coconut milk
2 cups water
2 tablespoons green curry
1 pound tilapia, cut into chunks
8 ounces cole slaw mix
juice from 2 limes
1/4 cup chopped cilantro

Mix the first three ingredients and simmer to a low boil.  Add your tilapia, cole slaw and lime juice.  Simmer for about 10 minutes or until fish is cooked through.  Squeeze in limes and toss in cilantro and serve.  This recipe is so easy and delicious - definitely one I will repeat multiple times!

    I just bought Tillapia today...but I think I have to pass on this one. Me and that coconut milk...can't do it! :)

    I have been on a fish stew quick in the last months. Will have to try this one. The cole slaw mix is a new twist.
