Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size.
All I know, is that it tastes like a mild vegetable and has the consistency of a bean. Delicious! Lily gobbles it up.
Heat a splash of olive oil and add the oinoin, celery and garlic, cook 5 minutes on medium low heat (do not burn the garlic!). Add remainder of the ingredients and simmer for about 30 minutes until hot and cooked through. Serve with more fresh cilantro sprinkled on top. Enjoy!

1 medium onion, chopped
1 medium rib celery, chopped
2 garlic cloves, minced
1 tablespoon chili powder
1 teaspoon ground cumin
5 cups chicken broth
1/4 cup canned green chiles
1 can hominy, drained or frozen corn kernels
1 can diced tomatoes
1 teaspoon dried oregano
chicken from rotisserie chicken, skin and bones removed.
1/4 cup chopped fresh cilantro leaves
Juice of 1 lime
salt and freshly ground black pepper
