splash of olive oil
1 4-ounce can or jar green curry paste
1 pound baby carrots
1 medium onion, chopped
1 red bell pepper, cut into pieces
4 yellow potatoes, peel and diced
1 pound skinless, boneless chicken breasts, sliced thinly
15-ounce can unsweetened coconut milk
Chopped fresh basil and cilantro
Heat your oil in a large pot. After about a minute, add curry and simmer for 2-3 minutes. Add carrots, onion, pepper and simmer for about 10 minutes.
Add potatoes, chicken, coconut milk, and about 1.5 cups water. Bring everything to a boil, then reduce heat to a simmer for about 20 minutes, until everything is cooked through. Serve alone or with rice.
