My blogger friend Kiersten has a beautiful What I Ate This Week recurring post that I always look forward to reading. Given my weekend cooking sprees, I’ve thought about trying to posting a What I Cooked this weekend series, but time gets away from me.
I am a weekend cook, and the other weekend I went a bit nuts. I made homemade meatballs filled with fresh herbs.
I made my mother’s delicious (and super easy) crab salad. This is super easy, with fresh dill and grapes. Recipe to come soon.
I experimented with homemade parsley humus. Note to self – fresh garlic should be used in moderation!
I sauted beets. Couldn’t resist the giant bundles in the store, so Adam and I will be snacking on these at work.
I made another batch of spicy sausage and spaghetti squash. The spaghetti squash had been frozen since past November but was edible (phew).
Last but not least, I made another batch of pasta-less zucchini lasagna.
Phew for weekend cooking!
