Thai Pork Slow Cooker Stew #Recipe

I am always on the hunt for a meal that can cook itself while we are at work.  This was delicious, and you can tailor the spice level to your liking with the amount of red pepper flakes.  This serves around 8.

Prepare the following items and cook in the slow cooker on low for about 8 hours.

2 pounds pork, trimmed and cut into chunks
2-3 red bell pepper cut into strips
1/4 cup teriyaki sauce
2 tablespoons rice or white wine vinegar
1-2 teaspoons crushed red pepper
2 garlic cloves, minced

Once your pork is fully cooked, add in:

1/4 cup creamy peanut butter

Serve over hot cooked basmati rice and top with chopped green onions and chopped dry roasted peanuts.  You will need about 1/2 cup chopped green onions and 2-3 tablespoons chopped peanuts.

    Sounds so delicious, but let me ask you because I hate peanut butter, is that flavor too prominent or is more subtle?

    Ooh, as soon as I saw the peanut butter in your photo of the ingredients, I knew this would be GOOD. I think this is the first Thai recipe I've seen that could be made in a slow cooker!

    I cooked ahead yesterday like you did awhile back. I am so excited that I can put together easy healthy meals quickly. I am going to try and do this once a month.
