Bertolli Soup Meals Easy Weeknight Dinner

While I spend significant time on the weekends cooking and preparing ahead for the week of meals, sometimes I take a shortcut. Tonight was one of those nights. I picked up a Bertolli Meal Soup to throw together for dinner.  Bertolli offers a yummy and easy-to-prepare restaurant-quality Bertolli Meal Soup.  Prepared on your stove in a very short time, you have a meal to go for two that is satisfying and hearty.  For us, this meal served well to feed two adults and one young child.

Lily and I hit the store after work/school and picked up a Tomato Florentine and Tortellini with Chicken soup.  I thought it would go well with some crusty french baguettes (I keep a stash in my freezer from Costco - they rock!) and fresh blueberries and strawberries with whipped cream.


Bertolli's meal soup was super easy to prepare - pour contents into a pot and add one cup of water.  Bring to boiling.  Could it get any easier?  There was an option to prepare in the microwave, too.


Meanwhile, while the soup simmered and heated, I toasted my french bread and whipped up some cream.  I think every meal needs some fresh herbs, so I topped our soup with fresh chopped parsley.  Fresh herbs add a great touch to pre-prepared foods!



We enjoyed the meal and were very satisfied with the portions.  Personally, I thought the soup was a bit salty for my taste and would love it if Bertolli would offer a lower-sodium option.  Adam, however, thought it tasted just fine.  The dinner and dessert disappeared within minutes and we went about our evening chores.  I enjoyed creating a quick, easy and delicious meal "from scratch" for our busy weeknight.

    I've never heard of these soups before! It definitely looks good, especially with your crusty French bread. And wow, that dessert--I haven't had berries and whipped cream in so long!

    Looks like a delicious meal! It really is hard some night to cook from scratch. It is nice to find a tasty alternative for when you just don't have time!
