MY THOUGHTS
I have not heard of Team Umizoomi prior to reviewing their fabulous new preschool math kit.  When the kit arrived, Lily and I dove into it and explored the contents.  Since I work full time, the afternoons can be a blur and I try to engage Lily in some type of activity or art project while I throw together some dinner.  I was a bit concerned that the kit might be too advanced for her, but Lily had a blast with the workbook.  The activities were just right for her and varied enough to hold her interest through about 15 pages straight.

We also enjoyed the cute story book and the DVD.  It was sweet to hear Lily chatting at the show and  replying to questions.  Overall, this is a great gift and a fabulous value for the price!  I will definitely be using it as a gift idea come birthday season in October.

Intel Asks: What Inspires You to Learn? #Contest

How do you inspire your child to learn?
Lily has always been an inquisitive child.  In fact, one of the ways I got her to try so many different foods is by introducing her to new words.  I would tell her, "guess what, I have asparagus, do you want to see what it looks like and tastes like" and you could see the intrigue in her eyes.  These days as a near-4 year old, we have moved on to other inspirations.  Every day after work/daycare, I present Lily with something creative or educational to tackle while I grapple with getting dinner ready.  Here are some of my favorite ways to inspire learning and creativity in my child:

Glue projects.  Keep a bag filled with colorful goodies that can be used in glue projects.  Our contains buttons, cut up ribbons, bows, colorful tissue paper, random packing materials.  I ask Lily to draw a picture first, then decorate it, or simply have her decorate a page out of a coloring book.

Sticker projects.  Self explanatory - plain paper and lots of stickers!  I give her birthday cards or old holiday cards to decorate with stickers, too.

Blocks & building projects.  I ask Lily to build a little farm, playground or zoo out of blocks, then we use her little plastic animals/toys to play on the playground.

Writing projects.  Lily loves to color several pictures on plain paper, "write" out some words and string them together into a little book.  Then she "reads" me the story that she wrote and drew.

Easy Quesadilla #Recipe Using Tortilla Land Flour Tortillas

If you've been following my mommy blog for any length of time, you know I love to cook and experiment with new recipes.  I love it so much so that I started my own recipe blog to keep track of them.  On there I recently blogged about my latest favorite Cuban sandwich style tortilla recipe.  YUM.  We all love it.

So, it is no secret that cooking is one of my passions.  I think I go into withdrawal if I spend a weekend outside of the kitchen.  I was excited to try the Tortilla Land all natural, uncooked tortillas.  At first I though...holy cow, I have to cook them first?  Is this going to be really time consuming?  Nope - each tortilla took about 1-2 minutes to cook on a pan on my stove top.  The tortillas are really incredibly good.  Soft and delicious...so much so I thought, oh no, these cannot possibly be good for me, let me check the calorie/fat content.  Luckily for me, they were on par calorie and fat wise with the dry store bought tortillas.  In the end I LOVE the Tortilla Land tortillas...so good, so natural, so easy and delicious. We've been known to snack on these tortillas plain - that is how good they are!

My favorite and easy quesadilla recipe is below.  Easy, quick, relatively healthy (they are a bit fatty if you use the "good" mozarella cheese).

bean of choice (I like black beans)
corn
mozarella cheese
flour tortillas
red onion
salsa and sour cream to taste

I prefer a mixture of black beans, cheese, corn (optional) and red onions.  Yum!  Sometimes I mix in finely diced chicken for more protein.


Mmmm...quesadillas....serve with your favorite salsa, tomatoes and sour cream or guacamole.  Delicious!

I Need Some Hair Advice

I always said I wouldn't dye my hair until it went gray, but then I got tired of waiting for the gray and let my crazy (I mean this in a good way) hair lady experiment with highlights and low-lights and different cuts.

However, after about a year of varying look...I need something more stable!  I'm debating going back to my super dark natural color.  But then there are days when I like the blond, sunny look.  What do you think looks better?  Help a girl out!

Do you remember being a new mom? Coming home from the hospital with a tiny little bundle of joy and thinking to yourself just HOW am I supposed to manage the feeding, changing and sleeping routine? I personally recall being a bit confused. I think we resorted to a daily sheet then a scribbled white board and Expo markers while my mother was graciously watching Lily when I returned to work.

Do you sometimes crave a little excitement or change in your life?  Don't get me wrong, I love my family, job and personal life, but sometimes I need to tackle something new or different.

This year I haven't really picked up anything "new" outside my recipe blog.  I thought about it close to New Year's, but was unable to come up with any exciting new ideas.  Then today, I noticed a friend post something on Facebook about a 1,000 mile running goal over the next year before his 40th birthday.  He asked who would join him and 5 minutes later I was on board.  Thanks, John, for the fitness motivation!  So tomorrow starts the countdown to my 1,000 mile challenge.  For my challenge I'm going to try to squeeze in 1,000 miles of running, walking and biking in the next year, starting tomorrow.

We had a wonderful week at Amelia Island, Florida.  Beautiful beach, wonderful food, perfect weather and a trip to the Jacksonville Zoo.  Here are a few of my favorite pictures - I took too many!

My Garden Update & Lily's Silliness

I'm happy to report my potted vegetables are rocking!  We've picked 4 tomatoes, lots of peas and 1 green bell pepper.  My poor cucumbers bit the dust despite growing really nicely for a while.  I will keep that in mind for next year.  A fellow Atlanta gardener-blogger mentioned planting radishes since they do well in shady spots.  I'm tempted to pick up some seeds because we do love our radishes around here!  Here are a bunch of pictures from last weekend.

MY THOUGHTS
Lily was more than happy to review The Safe Sporter water bottle.  We have about a 10 minute drive home from daycare every afternoon and this doubles as out pre-dinner snack time.  I often pick Lily up while she is outside running around and playing.  As soon as we make it to the car I hear the usual "do you have some water, I am SO thirsty."

The Kid Basix Safe Sporter is perfect for these car rides.  It is compact, easy to clean and easy to hold.  The plastic gripper on the outside of the water bottle is great for kid's hands to hold.  The covered top makes it great for transport.  I can toss it in my purse or lunch box without worrying that the spout will get dirty.  Best of all - dishwasher safe!  Overall - we're huge fans!

California Olive Committee's "Dress Up Your Dish" Contest

Below, Claire Robinson — one of the biggest stars in food television – is sharing her insider tips on how to dress up any dish worthy of its own TV cameo!

1. Use double duty ingredients.
Stocking your pantry is like stocking your wardrobe – it’s smart to have items on hand that serve double duty. For example, avocados can be used for guacamole, a sandwich spread, or when pureed, as a beautiful salad dressing.  California Black Ripe Olives are another one of those fabulous multi-purpose ingredients. Coarsely chop them with a little garlic, olive oil, and fresh herbs and you have a homemade tapenade.  Add them to store-bought hummus and it becomes a delicious dip or make your own muffaletta.



2. Enhance natural flavor.
Nothing is better than enjoying the natural flavors of local ingredients at the peak of freshness with a simple “go-to” vinaigrette.  Create your own by using one part vinegar and three parts olive oil.  Choose any vinegar you like, for example, I like champagne when I want to be a little fancy.  Try adding some chopped shallots and Dijon mustard and your family will never reach for the bottled stuff again.


3. Less is more.
You abide by this principal when dressing up that little black dress, but the same concept also applies in the kitchen. Cooking doesn’t have to be complicated. When you simplify the process with fewer ingredients, you will save time, frustration and money. So when you find yourself adding steps or multiple ingredients to balance flavor, take a step back, re-evaluate, and simplify.


4. When it comes to herbs, think fresh.
Not only do fresh herbs add flavor to a dish but they insert a pop of color that you don’t get from the dried variety. When cooking with fresh herbs, always throw them in at the last minute, this way the color will be vibrant and the flavor will be fresh.


5. Aim for a balanced bite.
Like a well-put together outfit, elements of your culinary ensemble should never compete. You want all of the flavor notes–sweet, salty, spicy and sour – to complement each other. That’s why I always keep California Black Ripe Olives on hand. No matter the cuisine, from Italian to Indian, they enhance multiple favors and dress up any dish.
