Roasted Chicken & Veggie Burritos #Recipe
This is a recipe from one of twenty meals made from my How to Start Freezer Cooking 5 Bulk Recipes to Create 20 Meals post. This meal utilizes frozen Item 3 Roasted Peppers, Item 4 Pulled Chicken and Item 5 Rice Pilaf. I popped mine into the fridge the night before and all of the items were defrosted when I got home to cook dinner. I actually forgot to add the rice pilaf but the burritos turned out great. The original recipe called for the pulled pork but I felt like chicken.
1 cup pulled chicken or pork, defrosted overnight
1 cup pulled chicken or pork, defrosted overnight
1 cup rife pilaf, defrosted overnight
1 cup roasted bell peppers and onions, defrosted overnight
large burrito tortillas
1 can of black beans, rinsed
sour cream
guacamole
cheese of choice
fresh cilantro, if desired
black olives, if desired
Preheat your peppers, rice and chicken on a large plate (or three). Top your burrito with cheese, black beans and all your favorite fixings. Wrap and enjoy. Usually I zap the burrito for 20-30 seconds in the microwave prior to adding sour cream and guacamole to make sure to get the cheese to melt nicely. I was able to throw this meal together after work in about 10 minutes flat!

My mouth is watering a little right now. LOL These look so good. I'm just reading up on your freezer cooking tips and recipes and I really think I'm going to give it a try.
I'll probably make a few modifications based on our specific tastes, but the five chosen food groups are a great foundation.

Those look so good! I bought some organic burritos to try out from Costco for quick lunches. Usually we bring left overs. Tonight we're going to Lion King on Broadway; no time for left overs.
