I make this at least every other week and our entire family enjoys it. You can experiment with different beans and colors of bell pepper. We typically use the following ingredients:
red kidney beans
finely chopped onion
diced red pepper
celery (I forgot to add it here)
half parts olive oil and salad vinegar
salt and pepper to taste
Rinse your beans.
Chop your red pepper or bell pepper of choice – this looks nice with multi-colored peppers, too. Chop onions finely and mix with beans and peppers in a bowl.
Mix half part olive oil and half salad vinegar. I add some salt and freshly ground pepper to the cup.
Whisk it well until blended into a nice dressing. Then pour over the bean mixture.
Enjoy! We use this as a side at BBQ parties or a light vegetarian snack.
