For some reaosn I have always been afraid of cooking raw spinach (don’t judge, spinach is just overwhelming!). I do use frozen chopped spinach in my famous lasagna but that’s about it. The weekend of Lily’s birthday party family was in town and my mother made the most delicious and super easy sauted spinach. I ate almost all of it like a meal. My mom said this recipe works well with kale, too.
bunch of fresh spinach leaves, washed, stems trimmed
2-3 cloves garlic, finely chopped
splash of olive oil
tablespoon of goat cheese
Heat oil and garlic for a minute, add spinach. Simmer until almost cooked through and add goat cheese. Serve warm as a great side.
