Sauted Spinach or Kale with Goat Cheese Recipe

For some reaosn I have always been afraid of cooking raw spinach (don't judge, spinach is just overwhelming!).  I do use frozen chopped spinach in my famous lasagna but that's about it.  The weekend of Lily's birthday party family was in town and my mother made the most delicious and super easy sauted spinach.  I ate almost all of it like a meal.  My mom said this recipe works well with kale, too. 

bunch of fresh spinach leaves, washed, stems trimmed
2-3 cloves garlic, finely chopped
splash of olive oil
tablespoon of goat cheese







Heat oil and garlic for a minute, add spinach.  Simmer until almost cooked through and add goat cheese. Serve warm as a great side.

    This sounds delicious! I love cooking with fresh spinach. This is one of the first recipes I used when we started getting tons of spinach in our CSA - http://thepioneerwoman.com/cooking/2008/04/creamed-spinach-be-still-my-heart/
    Also, sometimes I made soup - saute some minced garlic, add broth, can of crushed/chopped tomatoes, and cook tortellini in it. When the tortellini is done cooking, throw in handfuls of fresh baby spinach. Easy to make, tastes great, and it's healthy too!

    I've always gone the route of frozen chopped too. I've never tried kale!

    Yum! I am not a fan of kale - I don't buy it unless it is in my CSA share, and shamefully have leftovers that no one wants to eat when I cook it... I'll try this recipe next time!

    I would use fresh spinach, I am not afraid! I like this recipe because it is low carb and I am trying to stick to low carb eating (during the week anyway :).

    I make a version with cream-cheese butter and cheddar cheese, perhaps a little fattening but yummy!

    I actually bought Kale and used it in my juicer to make a lovely green drink!
