MY THOUGHTS

Do Colleges Offer Princess Degrees?

Being an ever-inquisitive three year old, Lily loves to try to spell out words and have us read them to her.  The other morning after I got her out of bed and we snuggled on the rocker in her room, she sat back and spelled out the "Oxford College" on my ratty (but OH SO comfy!) sweatshirt.  Promptly after I read the words to her the wheels were beginning to spin in her little head:

Lily: What's college?

Me: It is a school some grown ups go.  First you will go to elementary school, then middle school, then high school.  Some people go to college to learn how to be a teacher or a doctor.  You know?

Lily:  Oh yes.  And to be a princess, too.

Clearly, I must have missed that course in my educational pursuits :)

MY THOUGHTS
We received an adorable headband for Lily to review.  Of course, she was more than happy to participate and was showing off her new headband in no time.  Lily quickly corrected her father's compliment of her flower headband with a "it has a green leaf on it, too, see that?"  It fit well and is a fun, unique accessory for any child in your life.  Look at my little ham posing for the camera!  I really like to use this headband in concunjtion with a pony tail since Lily's hair comes out and tickles her face and eyes.  The headband really helps keep those straggley hair at bay.

Stuffed Cabbage Recipe

So, I can probably guess not many of you are cabbage fans...but we are.  Being Polish, I of course, grew up on it, and I am lucky that both Adam and Lily love cabbage...actually, they love pretty much anything I cook.  This weekend I was taking an inventory of the fridge and trying to use up some of the perishables and decided to modify the recipe a little to use up some green bell peppers that were able to bite the dust.  My recipe below makes a giant batch (I have a special giant pot I use to make this) so I would suggest halfing it if you're not a crazy cook like me.  To be honest, I won't add the chopped green pepper again - the flavor was a little too sweet for my tastes.  I kept it out of the recipe below.

1 cabbage head, rinsed
4 pounds ground meat of your choice
2 cups rice or barley, boiled
1 medium onion, chopped finely
2-4 cloves garlic, minced
tomatoe sauce
seasoning of your choice

Place your cabbage head in a big pot of water and bring it to a low boil.  Let it simmer to soften the cabbage while you make other preparations.  If you've never dealt with cabbage before, you should know it needs to be well cooked so that you can manipulate the leaves.  I stick a fork in the base and cut off the leaves as it boils to cook them nicely.

Start cooking your rice or barley.  While the cabbage and rice cook, chop onion, garlic and sauté in some olive oil.  I usually add some salt and pepper to this mixture.  Place your meat of choice in the largest mixing bowl you have.  Toss in some of your favorite seasonings to taste.  Add the veggie mixture and the rice and mix well with your hands.  This gets messy.  Wear gloves if raw meat freaks bothers you.  Set aside.  Your cabbage should be well cooked at this point.  Turn off the heat, poor off the hot water and let it sit and cool.  Once cool, cut or break off each cabbage leaf if you haven't done so while it was cooking.
I typically trim some of the hard rind off the leaf because that's how my mom taught me to do it.

Once you have a pile of leaves and a bowl of meat/rice/barley, get to work!  I get my giant pot ready and put some tomato sauce on the bottom.  Roll the meat into an oval and wrap it with a cabbage leaf, then place in the pot. 


Continue until you use up the meat mixture, toss any remaining cabbage into the pot.  Pour some tomato sauce over your stuffed cabbage and simmer on low to medium heat until the meat cooks through.  Enjoy!

The Joys of Living on a One Lane Road

We moved to Atlanta from Chicago about 9 years ago.  We finally found it in a super wooded, hilly and unique neighborhood and were sold.  When I first saw the house I thought, NO WAY am I ever living in that tiny dump. Well, looks can be decieving and we love our home. What we don't love is the one lane road we live of off. The poor garbage and recycling trucks have to back down the entire street.  The Fedex guys have messed up our rock retaining wall more times than I can count - a major annoyance for Adam since he has to fix the mess.
Delivery vans have snapped the electric wires overhead. But, after 9 nears of happy living, we've come to accept the little annoyances. What I haven't seen in those 9 years is a big old pickup truck stuck in the ditch in front of my house. Apparently Mr. Dodge Ram 1500 underestimated his vehicle's traction because this is what I saw coming home last week. That's my street and house and the lovely Dodge stuck in the ditch. It had to be towed out some time that evening.

Does My Husband Look Scary to You?

To preface this post, I have to say that my husband Adam is the sweetest man I know when it comes to children - and the best father.  He literally spends 10-30 minutes at Lily's daycare each morning playing with the kids, singing songs, reading.  Why?  Because he loves children.  In fact, if he could make a comparable income working at a daycare and give up his corporate job, he would.  So there's the set up for my rant.

My husband often shops at the Costco near his work (have I mentioned how sweet he is - I can't bear to step foot in that crowded, crazy place, so he does it for me) and he came home extremely annoyed the other night.  While waiting in line to check out, some woman with a screaming ~12 month old in front of him turned to Adam and said "turn around."  Apparently she thought he was scaring her baby.  What?  Excuse me?!  Look at that face!  That's Adam and Lily in her Halloween costume.  OK, so he has a beard but he's always smiling and he's a baby/child magnet.  Does he look scary to you?

He was pretty pissed but he did turn around - and of course the baby did not stop screaming.  Several people and the cashier commented on how rude that woman was after she finally got through the checkout and left.  Oh if only I had been there I would have given her a piece of my mind!  Do not blame my husband's face for your screaming child.  Ever.  Or you will see one major scary face glaring at you - mine!  Have you ever been treated so rudely in a public setting?
Disclosure: As usual, I am probably ranting because I am PMS-ing.  But don't ever be mean or rude to my husband without a valid reason or I will come after you.  The man rocks.  End of story.
