Good afternoon! The turning of the calendar inevitably brings New Year's resolutions.  Whether it's a desire to have more family time around the dinner table or just looking to trim the family budget a bit, making a resolution to eat in more often doesn't have to mean boring, tasteless meals or long hours slaving away in the kitchen. Bite Me Cookbook, a stomach-satisfying cookbook by sisters Julie Albert and Lisa Gnat, is a great way to achieve your New Year's resolution of cooking more meals at home in 2011!

An inspired collection of food and fun, Bite Me contains 175 dependably delicious recipes created for the urban and the suburban, the aspiring and the well-seasoned cook.  With a side order of sass (the section dedicated to soups is aptly named "Spoon Me", the chapter on Fish is entitled "Catch Me" and the book concludes with "Fork Me: Desserts for a Happy Ending"), the recipes in Bite Me do not require an army of sous-chefs, a pantry of guava paste, or blowtorch to turn a bag of groceries into a satisfying meal for a weeknight meal, casual dinner party, or formal holiday gathering.  Both authors are busy working mothers with three kids each so they both understand the importance of making cooking and entertaining fun and stress-free.

    My go-to recipe is simple but yummy! I take button mushrooms and remove the stems then stuff them with cream cheese. Next I wrap them in bacon and secure with toothpick. I always spinkle them with a little lemon pepper seasoning as well but this is opitional. Bake them till the bacon is crispy. I bet you can't eat just one or 3 lol.

    I like making a chip dip with velveeta, browned hamburger meat and salsa thrown into a crock pot. It's delicious and soooooooo easy! (And it heats up well, which is a super bonus!)

    Wow...the recipe for Magnifique Meatloaf with Mushroom Gravy sounds delicious!
    Our easy appy: Spread one brick of cream cheese on the bottom on a glass pie dish. Empty one can of Hormel Chili (with or without beans). Top with shredded cheddar cheese. Microwave until heated thru and cheese on top is melted. Serve with tortilla chips....so good (and easy)!

    I'd like to try the MOM'S LEMON CHICKEN. My favorite appetizer is buffalo chicken wing dip. 1 cup ranch dressing, shredded cheese, hot sauce, one package of cream cheese and chicken. Put in the crock pot and serve with tortilla chips.

    Okay...my favorite go to recipe for appetizers is won tons. I fill them with a meat mixture (ground meat-browned with various seasonings, onions, bell peppers, etc). Fry ahead of time. Reheat in oven, mix up some pasta sauce for dipping. People think you went to a lot of trouble.

    Also..for a dessert put a hershey kiss inside wonton..fry. Yum!

    My favorite go to appetizer recipe would be artichoke balls. I throw canned artichoke balls, drained in a food processor along with 1 egg, italian breadcrumbs and parmesian, mix it up then form balls out of the mixture and bake. It's yumm-o for artichoke lovers

    Buffalo Chicken Dip
    Ingredients
    2 (10 ounce) cans chunk chicken, drained
    2 (8 ounce) packages cream cheese, softened
    1 cup Ranch dressing
    3/4 cup pepper sauce (such as Frank's Red Hot®)
    1 1/2 cups shredded Cheddar cheese

    1 bunch celery, cleaned and cut into 4 inch pieces
    1 (8 ounce) box chicken-flavored crackers

    Directions
    Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers.

    my go-to appetizer is cheese bread. very simple and everyone loves it. get a loaf of french bread..cut in half and put it in the oven for about 8 mins on 350..just to toast it. take about a cup and a half of mayo (you can put more or less depending on your preference)...mix it with a variety of shredded cheeses ( i use sharp cheddar, parm, mozzarella), 2 cloves of chopped garlic and green onions. Mix together well and then spread on each side of the french loaf. Put back under the broiler till bubbly and melted. My husband begs for this at least 4 times a week.
