Last month I hosted a BBQ party to celebrate my birthday (I love parties!) and my girlfriend Vera brought the most delicious dip. Everyone who tried it demanded the recipe. I finally had a chance to make it for myself and the three of us devoured a large portion in one sitting.
2 small cans sliced black olives, drained 1 can of shoepeg corn (10-11oz), drained 1-2 avocados, diced 2-3 small tomatoes, diced finely (or use a can of petit diced tomatoes – I prefer fresh)
1 can black eyed peas
3-4 sprigs fresh dill, finely chopped
3-4 sprigs fresh cilantro, chopped
6-8 leaves frech basil, finely chopped
1 curet of Italian seasoning
Mix it all together and enjoy! For the herbs, I find that dill really makes this recipe perfect but feel free to mix it up and experiment. We scooped it up with these delicious multigrain and flax chips we love from Costco. My #1 helper Lily helped me make this. As you can see, she ate a bunch of the olives so I had to add another can to compensate 🙂
