Cashew Butter Chicken Stew Recipe
I love to cook and share recipes I really enjoy. I think I pulled this one out of Women's Health or Shape magazine and it is simply yummy. It also takes about 20-30 minutes start to finish - this is key for my workday evening meals! The following recipe makes 8 servings - more like 5 in our household, though :)
2 cups chopped red onion
1 red pepper, sliced into strips
1/2 teaspoon pepper
3 cups low-sodium chicken broth
1 lb chicken breast, cubed or sliced
1/4 cup fresh curly parsley, chopped
1 medium Granny Smith apple (I skipped this given my aversion to sweet dinner entrees)
1 cup frozen lima beans (I used a whole bag - probably closer to 2 cups)
1/4 teaspoon salt
1/4 teaspoon cayenne pepper
1.5 cups cashew butter, unsalted1) In a large non-stick pot, sauté onions, chicken and pepper with a teaspoon of olive oil. Cook until chicken begins to turn white, then add red pepper, broth, and parsley. Cover an bring to a boil.
2) Add apple (ick!), lima beans (yum!) salt, cayenne pepper and simmer for 10 minutes. Uncover and wisk in cashew butter until well blended.3) Serve and enjoy! All three of us love this stew!
